Are there any music camps ala stringscamp.org that adults can attend? Are there any that are targeted at adults?

I'm not sure if this is what you are looking for but there are several summer music camps for adult (amateur mostly) chamber musicians in the Northeast (Wellesley MA, Waltham (Brandeis U) MA, Bennington VT, Apple Hill VT to name a few) and some in Canada. There are also some things in the UK and Europe.
Strings magazine publishes a listing in one of their spring issues that includes camps for adults (which tend for the most part to be for amateur players). They range in intensity and usually require some audition material (mostly for placement in chamber groups).

NYOS Variations is aimed at everyone and mostly adults attend. It's a venture by the National Youth Orchestras of Scotland and takes place in the Autumn. It's in Ullapool in the North of Scotland, I went and it was really good. The Edinburgh Quartet are the resident ensemble for the week. Really good coaching and excellent drunken nights! I am new to the violin, but I am a trained musician that has just found the violin. I have fallen in love with the instrument but have chose to play the fiddle instead of the violin.
I have been to Rocky Mountain Fiddle camp, it is just that a fiddle camp with all kinds of Folk instruments thrown in. Hammer Dulcimer, tin whistle, bohran, irish flute, mandolin, banjo, cello and violin. The violin had a lot of different teachers, Jazz violin, Irish, Scottish, Old timey. It has 3 different level of players, beginner, intermediate, and advanced. This was an awesome experience, I learned about different styles of violin playing. I went for 2 weeks and will be returning this year. The facilities are wonderful, it is near Estes Park Colorado in a Salvation Army camp.
I have also been to a Camp in Northern Saskatchewan called Emma Lake, this is also a fiddle camp.
