My mom is a beginner pianist, and I'm an advanced violinist. I love playing violin/piano duets with her, but the level of music I'm playing is simply too hard for her to accompany. I'm wondering if anyone knows of some good piano/violin duets that are easy enough for a beginner pianist to play. It would be nice if the violin part was advanced, but I don't mind playing easy music if it's pretty. Thanks for any ideas!

The Hal Leonard "37 Violin Solos You Love to Play" might suit you. It's mostly salon music -- Drdla's Souvenir, Hubay's Hejre Kati, and so on. Some similar salon-type miniatures, like Elgar's Salut d'Amour, might work for you, too.
The book that Lydia recommended is very good. The skill required for the piano parts varies. Whoever chose the pieces had good taste.
A beautiful piece that has a nice piano reduction is the Meditation from Thais. The piano part is not trivial but the piece is relatively slow so it is manageable by a less skilled pianist.
I don't know if anyone has written for that particular instrumentation.
Okay, kidding.
How about the Schubert sonatinas? There's also a nice arrangement of jazz tunes called jazz, blues, and ragtime that's easy and fun. You can get it from sharmusic.com
I have composed a couple of fairly simple and interesting violin/piano pieces. They are free on my website. Some pieces intended to show off the violin have very minimal piano parts. For example, the accompaniment to the Rigaudon (Kreisler Sicilienne and Rigaudon) is just chords.
When I was young (a very long time ago), I played from a collection by C. Paul Herfurth called "Violin Music The Whole World Loves," published by Willis Music Company. It has easy piano parts and some anachronistic songs (Stephen Foster melodies, for instance), but it may be what you're looking for. I'm not sure it's still in print, but I found some copies available through some on-line sources, including Amazon. My favorite in this collection is "Songs My Mother Taught Me," which I would play as a boy while my mother sang.
